Waffles

Ingredients

  1. Separate the eggs (if you care about these things) and whisk only the egg whites.
  2. In a separate bowl, mix the flour, bicarb, sugar, and a pinch of salt.
  3. Heat the waffle-maker.
  4. Make a well, add the egg yolks and butter. Mix slowly as you add the milk until you get a smooth, thick batter.
  5. Fold the egg whites.
  6. Heat the oven for post-waffle-maker crisping.
  7. Cook your waffle being generous with time to allow it to cook through.
  8. Place finished waffles on a baking tray.
  9. When there’s no batter left put the baking tray in the oven for a 3-5 minutes to warm through and crisp.

Serves: About 5 waffles
