Ingredients
- 300g plain flour
- 4 large eggs
- 50g melted butter
- 1/2 teaspoon bicarbonate of soda
- 2 tablespoon caster sugar
- 600ml semi-skimmed milk
- Separate the eggs (if you care about these things) and whisk only the egg whites.
- In a separate bowl, mix the flour, bicarb, sugar, and a pinch of salt.
- Heat the waffle-maker.
- Make a well, add the egg yolks and butter. Mix slowly as you add the milk until you get a smooth, thick batter.
- Fold the egg whites.
- Heat the oven for post-waffle-maker crisping.
- Cook your waffle being generous with time to allow it to cook through.
- Place finished waffles on a baking tray.
- When there’s no batter left put the baking tray in the oven for a 3-5 minutes to warm through and crisp.
