Ingredients
- 450g plain flour
- 2 teaspoon bicarbonate of soda
- 2 teaspoon cream of tartar
- 1 teaspoon salt
- 30g lard/butter
- 1 teaspoon caster sugar
- 250ml buttermilk (bring up to 500ml with milk)
- Sift the flour, bicarbonate, cream of tartar, and salt together.
- Cut up the lard/butter and rub into the flour with your fingers until it resembles fine breadcrumbs.
- Mix in the sugar.
- Make a well in the centre of the flour and add the milk.
- Mix to a soft but manageable dough, add more milk if necessary.
- Turn the dough on to a floured surface.
- Knead it lightly into a 15-20cm round and flatten slightly
- Mark the round into four with the back of a knife.
- Bake at 200°C for around 30 minutes.
- Cool on a wire rack.
